The Chef's Tasting changes with the seasons and the theme, so treat these as representative rather than fixed.
Han calls it a new expression of Singaporean cuisine: hawker-stall and home dishes taken apart and put back together with modern technique, nostalgic in flavour but never a straight copy. The kitchen is deliberately locavore, sourcing the majority of its ingredients from local farms, offshore kelong seafood and wet markets, and there is no a la carte — you come for the multi-course Chef's Tasting.
LG Han is a self-taught Singaporean chef from three generations of restaurateurs. He studied finance in London and worked in banking before switching to cooking in 2012, staging under Mauro Colagreco of Mirazur and Tom Kerridge among others, and opened Labyrinth in 2014 at the age of 29.
In the Esplanade Mall at #02-23, on the Marina Bay promenade beside Esplanade – Theatres on the Bay, in the Civic District. Esplanade MRT on the Circle Line (Exit E) is a two to three minute walk through the mall; City Hall is five to seven minutes away.
Tasting menu only. Lunch is around S$208++ and the dinner Chef's Tasting around S$288++, with wine pairing about S$108++ and a tea pairing about S$78++. The ++ is before service charge and GST.
Reserve through the restaurant's website, on Chope, or by phone on +65 6223 4098; the online window opens about 30 days out. Book two to four weeks ahead for a weekend dinner. A credit card secures the table.
Closed Monday and Tuesday. Dinner Wednesday to Sunday from 6:30pm; lunch Friday to Sunday from noon to 2:30pm.
A small, dimly lit and intimate room dressed with local art, vintage photographs and old kitchenware, with an interactive, storytelling front of house. Smart casual — collared shirt and long trousers for men, and skip the flip-flops and ripped jeans.
Labyrinth opened on Neil Road in 2014, pivoted to its local, produce-driven approach around 2016 and won its first star in 2017. It has ranked on Asia's 50 Best Restaurants and carries the list's Flor de Caña Sustainable Restaurant Award, and it marked its tenth anniversary in 2024.
