Chef de cuisine Cheung Siu Kong is a Hong Kong native with more than thirty years of cooking, having started at age seven with his grandmother. He worked at Lei Garden in Hong Kong and then Singapore before joining Summer Pavilion in 2003; his philosophy is modest technique that lets the ingredient's flavour lead.

The Orchid lunch is S$138 per person, the Peony dinner S$188, and the Signature lunch or dinner menu S$328; a vegetarian set lunch is S$85. In practice lunch runs roughly S$100–200 per person and dinner S$150–350, with luxury ingredients priced by weight and market. Prices are before service charge and GST.

A contemporary Chinese-garden room with a moon gate, glass-walled main hall, hand-painted Italian tableware and floral motifs, kept polished and quiet with butler-style service and live Chinese flute or piano. Six private rooms seat six to thirty. Smart casual; no shorts, flip-flops, beachwear or sportswear.
Part of The Ritz-Carlton Millenia's fine dining, the restaurant was completely transformed and reopened in November 2015. Cheung joined in 2003; it earned its first star in 2016 and has held one in every edition since — one of twelve restaurants starred in all ten Singapore editions. It has been a Black Pearl One Diamond since 2018 and made Asia's 50 Best extended list in 2023, the first Singapore Cantonese restaurant to do so.
