The bread service and menus lean on native Chilean ingredients such as merken and coastal plants, and change over time, so any given dish may not be on when you visit.
This is a chef-driven counter experience built around a luminous rose-quartz counter that wraps the open kitchen. The menus trace Chile's landscapes, from the Atacama desert to Patagonia, drawing on fermentation, roasting and smoking alongside cold Pacific seafood. It opened in October 2023 as a collaboration between the founding chef-couple and a local culinary group.
Francisco Araya grew up in a restaurant family in San Felipe and trained in Chile before working at Alma and Borago in Santiago and at Mugaritz and elBulli in Spain. He opened 81 Restaurant in Tokyo and earned a star there at 29, then ran NAPA in Shanghai. His partner Fernanda Guerrero, also Chilean, is pastry chef and co-founder, responsible for the bread, the desserts and the chocolate trolley; the couple have worked together for a decade.
Araya is at #01-08 Mondrian Duxton, 83 Neil Road, on Duxton Hill in the Outram area. Tanjong Pagar MRT on the East-West line is about a ten-minute walk; there is parking at the hotel and at Craig Place.
At lunch, Wednesday to Saturday, the four-course Menu Rapido is S$80++ and the five-course Taste of Araya is S$168++. Dinner offers eight-course land and marine menus (Andes S$298++, Costa S$368++) and a seven-course vegetarian at S$298++, with wine pairings from S$90 to S$280. Expect roughly S$180 to S$450-plus per person; "++" is before service charge and GST.

Tuesday to Saturday, closed Sunday and Monday. Lunch runs Wednesday to Saturday from midday to 3pm; dinner from around 6 to 6.30pm with last orders about 9pm.
The room by Emma Maxwell moves through ombre walls evoking a Chilean sunrise, timber, rose quartz and malachite, with a twelve-seat quartz counter and a private room behind an Andes mural. It is intimate, moody and romantic. Dress is smart casual — no shorts or flip-flops.
Araya opened in October 2023 as Singapore's first South American fine dining, won its first star in 2024 to become the world's first starred Chilean restaurant, and has retained it since, including in 2026.
