what to order

Signature dishes

  • Leek consommé with potato cream.
  • Celeriac with scallops and Savoy cabbage.
  • Danish halibut with chestnut and black truffle.
  • Roast Challans duck with polenta, or roast pigeon with beetroot.
  • A cheese trolley to close.

The menus are seasonal, so dishes change; the kitchen is happy to work around dietary restrictions if you flag them when booking.

The concept

A vegetable-first degustation built around the signature discovery menu, 'La Balade du Végétal' — the vegetal journey — where French seasonal vegetables are the main subject and seafood and meat play supporting roles. Wild-foraged herbs from the Savoie in the French Alps run through the cooking, drawn from a 'herb library' of around forty. It is unusually flexible for dietary needs, from vegetarian and vegan to gluten- and dairy-free.

The chef

JAG was founded in 2018 by chef Jeremy Gillon and restaurateur Anant Tyagi, whose initials give the name. Gillon has since left, and the kitchen is now led by executive chef Laurence Tan, a Singaporean who was previously the restaurant's number two and keeps the vegetable philosophy intact. General manager Maryjoy Lim won the 2026 MICHELIN Guide Singapore Service Award.

Getting there

Singapore Tyler Print Institute, #02-02, 41 Robertson Quay — second floor of a restored riverside warehouse. Fort Canning MRT on the Downtown line is about 500m, a seven to ten minute walk; Clarke Quay is an alternative.

Prices

The light tasting menu is around S$175 per person and the Grand Experience about S$298. À la carte, mains run from around S$86 for sea bream to S$175 for blue lobster, before service charge and GST.

How to book

Book through the official website; groups and private dining via [email protected]. It is a small room open five days a week, so reserve two to four weeks ahead for a Friday or Saturday dinner. There is a S$150 per person non-refundable cancellation fee; state any dietary needs when you book.

Opening hours

Closed Sunday and Monday. Tuesday dinner only, 6pm to 10.30pm. Wednesday to Saturday, lunch noon to 3pm and dinner 6pm to 10.30pm.

The room & dress

A calm, light-filled space in the old warehouse — white walls, sage-green furnishings, brushed brass and rattan chairs, with large windows facing the river. Around forty seats plus a private room. Smart casual; no shorts or flip-flops.

A little history

Founded in 2018 at Duxton with just sixteen seats, JAG earned its star within the first year and has held it since. It moved to the larger Robertson Quay space in 2023, after which Gillon left and Tan took over the kitchen; the star was retained in 2025 and 2026.

Who it’s for

For lovers of contemporary French, produce-led tasting menus, and especially for vegetarians, vegans and anyone with dietary restrictions who rarely gets a fine-dining room built to suit them. Good for couples wanting quiet riverside refinement. Not for large-portion or casual diners.
