The idea is bistronomy: the ease and warmth of a bistro with the quality of a fine-dining kitchen, and no formality to speak of. Wine sits at the centre — the list runs past 600 bottles, including one of Asia's largest port reserves — and the dishes are built to pair and to share.
Chef-owner Mathieu Escoffier trained in Savoie and cooked with Joël Robuchon, Restaurant Daniel and Alain Ducasse; his parents ran the original Ma Cuisine in Beaune from 1996. He runs the restaurant with co-owner and sommelier Anthony Charmetant, whom he met at a Burgundy wine gathering, with Yusandri Tistogondo as executive chef since 2025.
At 38 Craig Road in the Tanjong Pagar and Duxton Hill shophouse row. Tanjong Pagar MRT on the East-West line is about five minutes on foot, with Outram Park and Maxwell also close.
You can eat modestly at around S$50 a head, but a full dinner with wine runs upwards of S$150++ per person. Dishes span from about S$9 for an oyster to S$288 for the Bresse chicken, with most mains between S$120 and S$240. The ++ is before service charge and GST.

Dinner Monday to Saturday from 5:00pm, and lunch on Thursday and Friday from noon to 2:30pm. Closed Sunday.

The original Ma Cuisine opened in Beaune in 1996; the Singapore restaurant opened in 2017 and won its star in 2018, just seven months in, holding it every edition since. In 2025 the team added Bonjour by Ma Cuisine, a breakfast and lunch spot next door at 39 Craig Road.
