what to order

Signature dishes

  • A rosemary-smoked organic egg, brought to the table under a cloche of rosemary smoke — the signature that opens the meal.
  • Hokkaido sea urchin with Mozambique langoustine tartare and Oscietra caviar.
  • "Crab Contrast" — Norwegian king crab, a miniature Singapore chilli-crab bun, and a Normandy brown-crab rémoulade in one course.
  • For dessert, the Hazelnut Délice, the kitchen's reworking of a Mont Blanc.

The menu changes with the seasons, so any given dish may not be on when you visit.

The concept

There is no à la carte here: Odette is a single composed tasting menu, French in technique and discipline but threaded with produce from the region — Singapore-farmed vegetables, herbs and edible flowers, regional citrus and spice. Royer named the restaurant after his grandmother, and the cooking is meant to read as personal rather than merely grand — his own phrase is "from terroir to table, heart to plate."

The chef

Julien Royer grew up in a fourth-generation farming family in Cantal, France, foraging and cooking off the land. He trained under Michel Bras in Laguiole, cooked in the French West Indies and London, and moved to Singapore in 2008 — first at the St. Regis, then leading Jaan atop Swissôtel The Stamford. Odette, opened in 2015 with the Lo & Behold Group, was his first solo restaurant; he now also runs Claudine in Singapore and the one-star Louise in Hong Kong.

Getting there

Odette occupies the Supreme Court Wing of the National Gallery, on the edge of the Civic District. City Hall MRT (EW13 / NS25) is about a five-minute walk; by day you can enter through the Coleman Street or Parliament Place doors, otherwise via the Supreme Court Wing foyer.

Prices

This is top-tier fine dining, and lunch is the gentler way in — a five-course "Terre & Mer" around S$368. The seven-course "Épicure" runs about S$468 at lunch and S$498 at dinner, with a vegetarian menu alongside. All figures are before service charge and GST, and all move with the season.

How to book

Reserve through Odette's own site (or +65 9822 8283). Booking opens on a roughly 30-day rolling window, and Friday and Saturday dinners go the moment a date appears — set a reminder. A non-refundable deposit is taken and then deducted from the final bill; changes are allowed up to 72 hours ahead.

Lunch Tuesday to Saturday (last seating around 1pm); dinner Monday to Saturday (last seating around 8.15pm); closed Sunday.

The room & dress

A warm, buttery room with sofa seating and low light — intimate despite the grandeur of the building around it. Dress is smart casual, and most guests dress up.

A little history

Odette opened in 2015, took two stars in the inaugural 2016 Singapore guide, and was promoted to three in 2019 — the same year it topped Asia's 50 Best Restaurants. It has held three stars every year since, 2026 included.

The once-in-a-trip French tasting menu: for food-focused travellers, a milestone dinner, or anyone pairing lunch with the National Gallery's collection upstairs. Lunch is the lower-priced way in; go at dinner for the full Épicure. Not the place for a quick, casual or budget meal.
