An eponymous omakase built on highly controlled, seasonal Japanese sushi craft, with the meal played out at the counter — temperature, timing and the condition of each fish all judged in front of you. The menu changes with the season and the market.
Chef-owner Yoshio Sakuta started at eighteen and worked the counter at two-star Shoukouwa before opening his own room. He is joined by chef Shunsuke Yoshizawa, with 22 years of experience, and an all-Japanese kitchen; head sommelier Iwabuchi Makoto, a MICHELIN Sommelier Award winner in 2023, runs the sake and wine.

Lunch is S$350++ (three appetisers, eight sushi, soup, dessert) with a larger S$580++ lunch, and the dinner omakase is S$580++. The Sakuta-Shima dinner is S$650++, a collaboration serving tempura from neighbouring Tenshima. Beverages and pairings are extra. "++" is before service charge and GST.

There is no fixed lead time, but with a ten-seat counter book as early as you can, especially Friday to Sunday. Cancellations within 72 hours or no-shows are charged S$500 per person; the private room carries a S$5,000 minimum spend.

Intimate, minimalist and elegant: a ten-seat counter cut from a 200-year-old Nara cypress, a private room for up to six, Japanese art and soft, moonlight-like lighting. No published dress code — dress smart. Heavy perfume is a stated no; the restaurant may refuse entry.
Sushi Sakuta opened on 1 June 2022, earned its first star in 2023, and was promoted to two stars in 2025 — the only promotion that year. It has since relocated from Capitol Kempinski to Millenia Walk and retained two stars in 2026.
