The omakase is seasonal, and several items (black abalone, monkfish liver, Murasaki uni) are supplements rather than fixtures.
A personalised Edomae omakase at an eight-seat counter — closer to a private room than a restaurant — where the chef oversees every guest himself. Seasonal seafood and produce arrive from Japan four times a week; the meal runs nigiri alongside cooked dishes, soup and vegetables.
Owner-chef Tomoo Kimura trained in Tokyo (Hattori Nutrition College, then Tsukiji-Sushi Sei) before moving to Singapore in 2012 as part of the opening team at one-star Sushi Ichi, then working as executive chef at Hashida Sushi. He opened the original Sushi Kimura in 2016 and, after a year away, returned with this eight-seat counter, drawing on long-standing supplier relationships in Japan.

Lunch omakase is S$250++ and dinner S$380++. Supplements include black abalone S$80++, monkfish liver S$45++ and Murasaki uni S$60++, with add-ons such as extra zuke maguro S$20++ and a toro-taku handroll S$25++. Sake, drinks and corkage are extra. "++" is before service charge and GST.
Book direct through the restaurant's own system or via TableCheck; reservations open up to a month ahead and require a full non-refundable deposit. With only eight seats, book as early as you can. No vegetarian or gluten-free options, and no last-minute changes to party size.
Lunch 12:30–2:30pm; dinner 7:00–9:30pm, Tuesday to Sunday. Closed Monday. Sittings are fixed, so arrive on time.
A compact, calm, counter-focused room of eight seats at a glass counter with a mirrored underside, built around direct interaction with the chef; there is no private room. No official dress code — smart casual is fine. The counter is fragrance-free, so avoid strong scents, and it cannot accept flowers.
Kimura came to Singapore in 2012 for the Sushi Ichi opening, moved to Hashida Sushi, then opened the original Sushi Kimura in 2016, where it held a star at around 22 seats until it closed in November 2024. After roughly a year away travelling, he reopened as Sushi Kimura Plus at Conrad Orchard in late 2025 with eight seats, earning a star under the new name in 2026.
For serious sushi enthusiasts who care about seasonality, sourcing and direct interaction with the chef, and it is solo-friendly as well as suiting couples and small groups up to eight. Not for spontaneous walk-ins, vegetarians, gluten-free diners or anyone wanting à la carte — this is Kimura's intimate second chapter.
