The concept
Refined hotel Cantonese rather than a casual dim-sum house — à la carte, tasting menus, roasted meats, double-boiled soups and live seafood, served in a communal sharing style with an imperial-garden feel. Dim sum is a major draw at lunch.
The chef
Executive Chinese chef Liu Ching Hai brings around twenty years across Hong Kong and Southeast Asia, cooking to authenticity, quality and seasonality. Dim sum chef Leong Kwok Sing handles the handcrafted dim sum, supported by a broader team across roasts, soups, seafood and wok.
Getting there
Level 3, Conrad Singapore Orchard, 1 Cuscaden Road, in Tanglin near the Orchard belt and the Botanic Gardens. The hotel was rebranded from the Regent Singapore in January 2023. Nearest MRT is Orchard Boulevard on the Thomson-East Coast Line, about two minutes away.
Prices
A five-course sharing lunch is around S$98++ (minimum four diners) and a daily tasting dinner around S$118++. In practice expect roughly S$100–180 per person at lunch and S$120–250+ at dinner before drinks, with live seafood and premium ingredients pushing it higher. "++" is before service charge and GST.

Book through the Conrad's dining channels, the MICHELIN link or Chope, or call +65 6725 3288. Reserve at least a week ahead for weekend dim sum, large groups and special occasions; weekday lunch is the easiest.
Opening hours
Lunch Monday to Friday 12:00–2:30pm and Saturday to Sunday 11:30am–2:30pm; dinner daily 6:00–10:30pm. No regular closing day — check public holidays.
The room & dress
A contemporary Chinese room in warm whites and muted tones, serene and quiet with an imperial-garden feel and private dining rooms. Smart casual as a minimum, business casual or elegant for dinner; no beachwear, singlets, flip-flops or sportswear.
A little history
The building opened in the early 1980s as the Pavilion InterContinental, became the Regent Singapore, then rebranded as Conrad Singapore Orchard under Hilton in January 2023; Summer Palace carried through the change and refurbishment. It has held one star since 2017, retained again in 2026.
Who it’s for
A polished introduction to Cantonese cooking in central Singapore — good for families sharing dishes, business lunches, quieter fine dining and dim-sum lovers at weekend lunch, with crocodile and venison for the adventurous. Vegetarian and gluten-free are available on request. Pairs well with an Orchard, Botanic Gardens or Tanglin itinerary.
