Chef-owner Chen Kentaro is the third-generation successor in a famous culinary family. His grandfather, Chen Kenmin, was born in Sichuan and opened the first Shisen Hanten in Tokyo, pioneering Sichuan cooking in Japan; his father, Chen Kenichi, became known as the Iron Chef Chinese on television. Kentaro combines his grandfather's recipes with his father's innovations, supported by a resident executive team.

The restaurant brought the Chen family's Shisen Hanten and its Japanese-Sichuan style to Orchard in the former Mandarin Orchard, now the Hilton Singapore Orchard. It held two stars across the 2017 to 2022 editions, when it was Singapore's highest-rated Chinese restaurant, was later dropped to one star, and has retained one star from 2025 through 2026.
