The menu changes with the Japanese seasons, so any given dish depends on what has arrived that week.
An omakase-only counter that runs a Kyoto kaiseki course into a Tokyo-style sushi course, driven entirely by the season and by seafood flown in from Japan. Twelve seats, one communal sitting per service, at both lunch and dinner.
Chef Kazuhiro Hamamoto trained at Kyoto Culinary Art College and apprenticed at the three-star Kichisen in Kyoto before sushi training in Tokyo. In Singapore he was part of the Waku Ghin opening team and was resident chef at Ki-sho from 2013 to 2021, then opened his own room in September 2021. Hiroshi Ozawa runs the floor and the wine.
A low-key shophouse at 58 Tras Street in the Tanjong Pagar and Outram area. Tanjong Pagar MRT is about a five-minute walk; Outram Park and Telok Ayer are within ten.
Lunch omakase is roughly S$280 to S$300. Dinner tiers run from about S$425 up to the Fancy Omakase at S$550 to S$588, all before service charge and GST. Sake or wine pairing can push a dinner past S$600 a head.
