what to order

Signature dishes

  • Mangrove-wood-charred scallop with laksa-leaf sauce
  • Marinated spot prawn with asam pedas
  • Roti paung with Johorean milk butter
  • Betel-leaf noodles in ulam dressing with mud crab
  • Duck percik from Bidor with rawon sauce

Menus are seasonal, with a Kuntum lunch and a Nusantara dinner, so courses change.

The concept

The cooking draws on regional flavours across the archipelago — Seroja means lotus in Malay — without reproducing home-style dishes, leaning on herbs, spices, fermentation and open-fire grilling with seafood at the centre. Sustainability is built into the kitchen through direct work with farmers and fishermen, recognised by a Green Star.

The chef

Kevin Wong was born in Klang, Malaysia, and built a roughly 14-year career across France, California and Singapore, rising from junior sous chef to head chef at Meta before opening Seroja in 2022. He was named to Forbes 30 Under 30 Asia in the Arts category in 2022 and won the MICHELIN Young Chef Award in 2023. Head chef Andrew Ou, who met Wong at culinary school in Malaysia, has cooked at Michel Bras in Laguiole and Ledoyen in Paris.

Getting there

How to book

Reservations open 60 days ahead through the online system, with a waitlist when full, and a S$200 per diner credit-card authorisation. Changes or cancellations need at least 72 hours' notice or the amount is forfeited, and a no-show is charged the full menu. Book close to the 60-day mark for Friday or Saturday.

Opening hours

Dinner Tuesday to Saturday, 6:00 to 11:00pm (last seating 8:30pm). Lunch Friday and Saturday, 12:00 to 2:30pm. Closed Sunday and Monday.

The room & dress

An intimate, polished room in Duo Galleria, close to Bugis, Kampong Glam, City Hall and the CBD. No formal dress code is published, but smart casual suits it; avoid beachwear, flip-flops, athletic wear and casual shorts.

A little history

Seroja opened in 2022 and rose quickly: in 2023 it took a star, Singapore's first-ever MICHELIN Green Star, and Wong's Young Chef Award. In 2026 it was promoted to two stars while retaining the Green Star, putting it among Singapore's nine two-starred restaurants.

Who it’s for

For diners who want ambitious, chef-driven Southeast Asian cooking beyond hawker staples, and who care about seafood and sustainability. Not for a fast, cheap, casual or highly customisable meal.
