Emmanuel Stroobant is a Belgian-born, Singapore-based chef who trained under Pierre Romayer and Francis Dernouchamp, and whose years in Australia, Malaysia and Singapore shaped his East-meets-West style. He was named World Gourmet Summit Chef of the Year in 2002 and 2006. Head chef Yap Ken Kai, from Ampang in Malaysia, cooked under Michael Vrijmoed at one-star Restaurant Vrijmoed in Ghent before joining Saint Pierre and returning as head chef in 2024. The 2,300-plus bottle wine list is overseen by Tan Ying Hsien, Singapore's first Master of Wine.
