Westaway calls it 'reinventing British': familiar British food memories and ingredients rebuilt into precise tasting-menu dishes, with premium British sourcing, strong seasonality and modern technique. This is not pub cooking.
Executive chef Kirk Westaway grew up in Devon among garden vegetables, dairy and seafood, and studied at Exeter College. He cooked at the two-star D.O.M. in São Paulo and The Greenhouse in London, where he met Julien Royer, who brought him to Singapore as sous chef when JAAN was Modern French; Westaway took over the kitchen after Royer left in 2015. Head chef Ng Guo Lun and head sommelier Bella Jankaew — winner of the 2025 MICHELIN Singapore Sommelier Award — round out the team, with a cellar of around 700 labels.
Level 70 of Swissôtel The Stamford, 2 Stamford Road, in the City Hall and Downtown Core area. City Hall MRT (North-South and East-West lines) is closest, with Esplanade on the Circle line adjacent; from City Hall follow signs for Raffles City and Swissôtel The Stamford, then take the lift to Level 70.
Lunch from S$198++ for four courses or S$238++ for five. The dinner tasting is around S$388++ per person. The '++' is service charge and GST on top.

An intimate high-altitude room with city and coastal views, seafoam-blue banquettes and herringbone floors, centred on a hand-blown Murano glass installation drawn from the restaurant's original chandelier. Service is attentive rather than stiff. The hotel sets a formal dress code — collared shirt and tailored trousers or equivalent; no shorts, beachwear or casual sandals.
Formerly the Modern French JAAN, it turned to Westaway's cooking from 2015 and won its first star in the 2016 inaugural Singapore guide, was renamed JAAN by Kirk Westaway in 2019, and has held two stars across every edition from 2021 to 2025.
