Everything is seasonal and produce-led, so the courses change through the year.
The cooking is creative, produce-led European fare served in the climate-controlled glasshouse — a back-to-nature setting with handmade ceramics and a trio of kitchen islands for a bit of theatre. Menus come as four- and seven-course tastings, with full omnivore and vegetarian versions.
Chef-patron Michael Wilson is an Australian from Melbourne who apprenticed under Guy Grossi and Andrew McConnell and earned his first star at Phénix in Shanghai just months after it opened. He conceived both Marguerite and its sister restaurant Hortus, and also runs the gelateria Mylo's in the same complex.

Marguerite opened in November 2021 in the former Pollen space, where Wilson had joined as chef de cuisine the year before, and is named for the marguerite daisy. It won its first star in July 2022 and has retained it every edition since, alongside sister venues Hortus and Mylo's.
