what to order

Signature dishes

  • Roasted Pipa Duck, deboned and minced with prawn, water chestnut and aged tangerine peel, restuffed into a pipa shape, roasted over lychee wood and eaten like a little sandwich (S$98).
  • Radish puff with Chinese ham, folded into a handbag shape with a dragonfly charm (around S$15 to S$16 for three).
  • Poached Hokkaido squid with peanut and garlic in chilli oil (S$68).
  • Braised Angus short rib with preserved vegetable.
  • Mango fortune pouch, or taro tart with bird's nest, to finish.

The menu is seasonal and premium items such as suckling pig, dried abalone and snow crab need one to three days' notice.

The concept

Refined Cantonese cooking rooted in Guangdong, with sub-regional Teochew, Hakka and Shun De influences, set against panoramic city and harbour views. The kitchen leans on premium seafood, roast meats and artisanal dim sum, with restrained, precise technique. The room spans the whole 55th floor — some 160-plus seats — with two private rooms, two suites, a Chef's Table and a tea lounge. The name combines jin (gold), ting (dragonfly) and wan (bay).

The chef

Executive chef Albert Li, from Guangxi, brings more than twenty years across MICHELIN and Black Pearl kitchens in China, with wok mastery and food sculpting among his signatures. Head sommelier Joe Yang — previously at the three-star Jade Dragon and Alain Ducasse at Morpheus — curates a list of over a hundred Chinese wines and won the 2026 MICHELIN Singapore Sommelier Award, the first ever given to a Chinese restaurant. A dedicated head tea master, Jacky Zhao Gang, oversees the tea programme.

Getting there

Level 55 of Marina Bay Sands Hotel Tower 1, 10 Bayfront Avenue, with 360-degree views. Bayfront MRT is closest — Exit A to Tower 1, then the lift to Level 55, about five to seven minutes. Ride-hailing should be set to 'Marina Bay Sands Hotel Tower 1'.

Prices

À la carte, dim sum and appetisers run S$12 to S$18 and mains from S$16 up to S$138. The dinner tasting is S$198 per person, with a S$158 option; set lunches start around S$58 to S$66. A full dinner tends to land between S$250 and S$400-plus a head. Premium items such as dried abalone and snow crab climb well beyond that.

Reserve at marinabaysands.com or on +65 6688 9969 through the restaurant's own system. Book several weeks ahead, more for Chinese New Year, with a phone waitlist. Lunch is allocated 90 minutes and dinner two hours.

Opening hours

Open daily. Lunch 11.30am to 2.30pm; dinner 5.30pm to 9.30pm, with the last seating at those times. No closed days.

The room & dress

A dramatic AvroKO-designed room taking cues from the Song Dynasty — deep regal blues and gilded gold, dragonfly motifs throughout, Fromental wallpapers, latticework and jade accents, with the Level 55 views. Smart casual is strictly enforced: collared shirt or smart tee and trousers, closed-toe shoes; no slippers, singlets, swimwear or gym wear, and no shorts at dinner. The door may turn you away.

A little history

Opened on 23 July 2025 as part of the Marina Bay Sands transformation, it is Singapore's highest Cantonese restaurant and won both its first MICHELIN star and the Sommelier Award in the August 2026 guide — as a brand-new entrant in its debut year.

Who it’s for

For food-focused travellers who want authentic Guangdong Cantonese with a view, and for special occasions using the private rooms or Chef's Table. Wine and tea enthusiasts are especially well served, and it slots easily into a Marina Bay Sands itinerary. Not a casual or budget meal.
