Brehm's premise is that cuisines are linked by centuries of migration and exchange, so a single meal moves between Brazilian, Southeast Asian, Japanese, Middle Eastern and European references. It is research-driven and ingredient-led, but built to feel emotionally accessible — familiar flavour cues arriving in unfamiliar combinations.
Ivan Brehm was born in São Paulo to a mix of Italian, German, Russian, Spanish, Lebanese, Syrian and Brazilian heritage. He trained at Per Se in New York, Mugaritz in Spain and Hibiscus in London, and spent four years as a development chef at Heston Blumenthal's Fat Duck Experimental Kitchen. He moved to Singapore in 2013, led Bacchanalia to a star in the inaugural 2016 guide, and opened Nouri in 2017.

Brehm made his name taking Bacchanalia to a star in 2016, then opened Nouri in 2017 with Loh Lik Peng's Unlisted Collection. The restaurant reached Asia's 50 Best in 2019 and has held its star through 2026.
